How To Make Your Own Mayonnaise

Making your own homemade mayonnaise is easy and has a superior taste.

Homemade mayonnaise has a rich creamy flavor. People tend to fear making homemade mayonnaise because it contains raw eggs. However the fear of using raw eggs shouldn’t be a worry if you use fresh organic cage free eggs. Homemade mayonnaise taste so good compared to the store bought brands, once you learn how to make it you’ll never go back.

What you’ll need
  • 3 fresh eggs.
  • 1 cup vegetable oil.
  • 1 tablespoon fresh lemon juice.
  • Salt.
  • Pepper.
  • Mustard.
  • Food Processor.

Step 1: Add the three egg yolks to the food processor making sure you only add the yolks and not the egg whites.

Step 2: Add a tablespoon of your favorite mustard. Use a regular or dijon mustard of your choosing.

Step 3: Turn on your food processor and slowly add the vegetable oil. In the beginning you want to go slow to allow the oil to emulsify with the egg yolks. If you pour the oil too quickly, it will not solidify. The entire process of dumping the cup of oil in the processor should take 3-4 minutes. As you continue to pour the oil in the processor you will notice towards the end, the mayonnaise will begin to thicken.

Step 4: At this point you should have something that resembles mayonnaise. Turn off the food processor and add a splash of lemon juice, salt and pepper.

Step 5: Give the mayonnaise another quick 3-5 second blast in the food processor and you’re done.Once your mayonnaise is complete, you can keep it in your fridge for up to a week.

The biggest problem people have when they make homemade mayonnaise is the adding of the oil. Make sure your food processor is clean and do not add your seasoning until you've emulsified the oil with the egg yolks.
