One big reason people drink almond milk is because they are lactose intolerant. Almond milk is a great alternative for those who need a cow milk replacement. Not only is almond milk very nutritious, it tastes amazing. Almond milk is rich in vitamins and contains calcium and phosphorous, plus it contains no saturated fat or cholesterol.

This recipe makes 32 ounces of almond milk.

Ingredients

  • 2 cups of whole raw almonds.
  • 4 cups of purified water
  • 2 tsp of honey

Directions

1. Place almonds in a large bowl and soak them by covering them with an inch of water. The almonds will absorb the water and expand in the bowl. This will also make them incredibly soft. Make sure you soak the almonds for a minimum of 12 hours.

2. Drain almonds and rinse in bowl. Place almonds in blender with 4 cups of purified water. If you’re using a smaller blender, you can split your batch in half and repeat this process. Blend the almonds for 3-4 minutes.

3. Using cheesecloth, stain the almonds over a large bowl then pour the almond milk mixture back into the strainer. Using your hands, press all the almond milk from the almond meal.

4. Taste the milk, and add honey if desired. Place in the refrigerator in a sealed glass container. Your milk will stay fresh for up to a week.

Final Thoughts

This recipe is both SCD and Paleo safe. It contains no lactose or complex sugars. You can use almond milk as a substitute for dairy milk in your recipes. Almonds can be pricey, but if you buy them in bulk they are very affordable. The important thing to remember here is that you can still enjoy milk, even if you are on a very restricted diet.
